When little baby chef Lauren was first learning how to cook in college, this was one of the first recipes that was perfected.

Growing up, I was not much of a cook. MAYBE I would make toll house cookies every once in a while. Or box mac and cheese. But that was about the extent of my cooking. When I got to college, I realized the importance of nourishing my body with food other than SpongeBob Kraft Mac and Cheese (still the GOAT of all box mac and cheese).

I knew I did not want to mess with raw meat. I also knew I needed to add some yummy veggies into the mix. So came to be this sausage and and veggie sheet pan dinner. Minimal dishes and minimal effort. When I first started making this recipe, I used normal smoked sausage links which are delicious. For this recipe, I used Aldi Italian chicken sausage which is great! But my all time favorite sausage to use is the jalapeno chicken sausage from Trader Joes. It is chef's kiss in my very humble opinion. Unfortunately, the closest Trader Joes is a ways away so I can't make the commute as often.

Regardless, this dinner is still super yummy and packed with all sorts of good nutrients.

This recipe was definitely a vision from God because I really can't think of anything more delicious. First of all, a classic tres leches is one of the greatest desserts of all time, then add the flavors of pumpkin, cinnamon, and caramel and it is the perfect dessert for fall. Second, even though this cake does take some time in the fridge, it isn't difficult to make.


Once I started making it I was a little worried about the pumpkin, eggs, and oil all together and what the texture of all of those things would be like in this cake, but I was pleasantly surprised when I tried it. Especially after adding the milk mixture, I did not feel it made a huge difference but if you want your cake to not be as dense, hold off on adding the eggs and oil.

Baked potatoes are great, but TWICE baked potatoes?!

In twice baked potatoes you have creamy, cheesy, goodness in every bite that is reminiscent of mashed potatoes. Probably one of my favorite foods of all time. This recipe can also be made into some great variations. Check out some ideas I had at the end of my recipe card!
